- 4 cups Sweet potatoes, peeled and cubed
- 1/2 cup Brown sugar
- 1/4 cup Butter, melted
- 1/2 cup Milk
- 2 large Eggs, beaten
- 1 teaspoon Vanilla extract
- 1/2 teaspoon Salt
- 1/2 teaspoon Cinnamon
- 1 cup Miniature marshmallows (optional)
- 1/2 cup Pecans, chopped (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Boil sweet potatoes in a pot until tender (about 15 minutes). Drain and mash.
- In a bowl, mix the mashed sweet potatoes, brown sugar, melted butter, milk, eggs, vanilla, salt, and cinnamon until smooth.
- Pour the mixture into a greased baking dish.
- Top with marshmallows and chopped pecans, if using.
- Bake for 25-30 minutes until heated through and lightly browned.
Notes
For a dairy-free option, substitute plant-based milk and margarine. Feel free to experiment with spices to customize the flavor.
