Delicious and customizable chicken fajitas cooked on a Blackstone grill, bursting with vibrant colors and rich flavors, served with a zesty cilantro lime sauce.

- 1/4 cup + 1 tablespoon Extra Virgin Olive Oil (divided)
- 2 tablespoons Lime Juice
- 6–8 Boneless, Skinless Chicken Thighs
- 3 teaspoons Chili Powder
- 3 teaspoons Ground Cumin
- 1 1/2 teaspoons Kosher Salt
- 1 teaspoon Paprika (preferably smoked)
- 1 teaspoon Onion Powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Dried Oregano Leaves
- 1/4 teaspoon Ground Black Pepper
- 1/8 teaspoon Ground Cayenne Pepper
- 1/2 Red Onion (sliced)
- 1/2 Yellow Onion (sliced)
- 3 Bell Peppers (Red, Green, Orange, sliced)
- 1 tablespoon Garlic (minced)
- 2 tablespoons Fajita Seasoning
- 3/4 cup Plain Greek Yogurt
- 1/4 cup Mayo
- 2–4 tablespoons Lime Juice
- 1 tablespoon Light Olive Oil
- Zest of 1 Lime
- 1/4 cup Fresh Cilantro (chopped)
- Tortillas of Your Choice (warmed)
- Lime Wedges
- Fresh Cilantro Leaves
- Sour Cream (optional)
- Guacamole (optional)
Instructions
- Combine 1/4 cup olive oil, 2 tablespoons lime juice, and spices in a small bowl. Whisk until well blended.
- Place chicken thighs in a medium bowl and pour marinade over them. Toss to coat and set aside.
- In a large bowl, mix red and yellow onions, bell peppers, garlic, and fajita seasoning. Toss well.
- In a food processor, combine Greek yogurt, mayo, lime juice, light olive oil, lime zest, cilantro, salt, and pepper. Blend until smooth. Refrigerate until serving.
- Drizzle 1 tablespoon olive oil over the Blackstone grill, and add the marinated chicken. Cook for 3-4 minutes per side, until it reaches 165°F.
- After the chicken rests, add another tablespoon of olive oil to the grill and toss the veggies on. Cook until slightly charred, about 3-5 minutes.
- Slice the rested chicken into strips, or cut into bite-sized pieces if you prefer.
- Assemble your fajitas with the tortillas, placing veggies and chicken in each, then topping with Cilantro Lime Sauce, fresh cilantro, and a squeeze of lime juice. Enjoy!
Notes
For additional flavor, allow chicken to marinate for at least 30 minutes or overnight. You can customize veggies and spices to suit your taste.
