  • 2 eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3 3/4 cups cake flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt

  • 2 tablespoons cake flour for filling
  • 1 cup powdered sugar for icing
  • 1/2 teaspoon cinnamon for icing

  • 2 1/2 tablespoons milk for icing

Instructions

  1. In a stand mixer, beat together 1 cup unsalted butter, 1/2 cup granulated sugar, and 1 cup light brown sugar until light and fluffy, about 2-3 minutes.
  2. Add in 2 eggs and 1 teaspoon vanilla extract. Beat until fully incorporated.
  3. In another bowl, whisk together 3 3/4 cups cake flour, 2 tablespoons cornstarch, 1 teaspoon baking soda, 1 1/2 teaspoons baking powder, and 1 teaspoon kosher salt.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Cover the dough and chill in the refrigerator for about an hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. For the filling, mix together 5 tablespoons softened butter, 3/4 cup brown sugar, 1 teaspoon cinnamon, and 2 tablespoons cake flour until smooth. Form the filling into small balls.
  8. Scoop out 1/4 cup of dough, divide it in half, create a well in one half, place a filling ball inside, and cover with the other half. Pinch to seal.
  9. Place on baking sheets, spaced apart, and bake for 11-13 minutes until lightly golden.
  10. Cool on sheets for 5 minutes before transferring to wire racks.
  11. For the icing, whisk together 1 cup powdered sugar, 3 tablespoons melted butter, 2 1/2 tablespoons milk, and 1/2 teaspoon cinnamon until smooth. Drizzle over cooled cookies.
