Ingredients

  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate ganache (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together butter, granulated sugar, and brown sugar in a large bowl until smooth.
  3. Beat in eggs one at a time, then stir in vanilla.
  4. Combine flour, cocoa powder, baking powder, and salt; gradually stir into the creamed mixture.
  5. Roll the dough into 1-inch balls and place them on a baking sheet.
  6. Press your thumb into the center of each cookie to create a small well.
  7. Bake for 10-12 minutes, until they are slightly set.
  8. Allow cookies to cool completely on wire racks.
  9. Fill the thumbprint with chocolate ganache.
  10. Let ganache set before serving.

Notes

If the dough feels too soft, refrigerate for 30 minutes before baking.
