- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup chocolate ganache (for filling)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together butter, granulated sugar, and brown sugar in a large bowl until smooth.
- Beat in eggs one at a time, then stir in vanilla.
- Combine flour, cocoa powder, baking powder, and salt; gradually stir into the creamed mixture.
- Roll the dough into 1-inch balls and place them on a baking sheet.
- Press your thumb into the center of each cookie to create a small well.
- Bake for 10-12 minutes, until they are slightly set.
- Allow cookies to cool completely on wire racks.
- Fill the thumbprint with chocolate ganache.
- Let ganache set before serving.
Notes
If the dough feels too soft, refrigerate for 30 minutes before baking.
