Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together flour, baking powder, salt, and cinnamon.
- In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- In a small bowl, combine the filling ingredients: brown sugar and cinnamon.
- Spread half of the dough onto parchment paper, sprinkle filling over it, and roll up tightly.
- Slice into rounds about 1/2 inch thick and place on a lined baking sheet.
- Bake for 10-12 minutes or until golden brown.
- Let cool on the pan for a few minutes before transferring to a wire rack.
