Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. In a small bowl, combine the filling ingredients: brown sugar and cinnamon.
  7. Spread half of the dough onto parchment paper, sprinkle filling over it, and roll up tightly.
  8. Slice into rounds about 1/2 inch thick and place on a lined baking sheet.
  9. Bake for 10-12 minutes or until golden brown.
  10. Let cool on the pan for a few minutes before transferring to a wire rack.
