Ingredients

  • 1 lb Ground Beef
  • 4 cups Beef Broth
  • 2 large Carrots, diced
  • 2 Potatoes, peeled and diced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Tomato Paste
  • 1 teaspoon Dried Thyme
  • Salt and Pepper to taste
  • Fresh Parsley for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the chopped onion and minced garlic. Cook until onion is translucent, about 3-5 minutes.
  3. Stir in the diced carrots and potatoes. Cook for a couple of minutes.
  4. Pour in the beef broth, Worcestershire sauce, and tomato paste. Add dried thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat to low and let it simmer for 30-40 minutes.
  6. Taste the stew before serving and adjust seasonings if needed. Serve hot, garnished with fresh parsley.

Notes

This stew tastes even better the next day and can be frozen for up to a month.
