Description

A creamy and dreamy pumpkin soup that brings the flavors of fall to your table. Perfectly spiced and easy to make in a crockpot.


Ingredients

  • 1 can (15 oz) pumpkin puree
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • Optional: croutons or pumpkin seeds for garnish

Instructions

  1. Combine pumpkin puree, vegetable broth, diced onion, minced garlic, and heavy cream in a crockpot.
  2. Add ground cinnamon, nutmeg, salt, and pepper, stirring well.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Blend with an immersion blender until smooth.
  5. Serve warm, garnished with croutons or pumpkin seeds if desired.

Notes

For a vegan version, use coconut cream instead of heavy cream. This soup can be frozen for up to a month.
