Description

A comforting and flavorful crockpot lasagna recipe that layers Italian sausage, marinara sauce, and cheeses.


Ingredients

  • 375 grams Italian sausage (¾ lb)
  • 1 small onion (finely diced)
  • 2½ cups marinara sauce
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 9 lasagna noodles (not oven ready)
  • 2 cups shredded mozzarella cheese
  • 3 tablespoons shredded Parmesan cheese

Instructions

  1. In a skillet, cook the Italian sausage and onion over medium-high heat until browned.
  2. Stir in marinara sauce, oregano, salt, and pepper until combined.
  3. Grease a 2.5-4 quart slow cooker with cooking spray.
  4. Spread a bit of sauce on the bottom of the slow cooker.
  5. Layer 3 lasagna noodles in the bottom, breaking to fit as necessary.
  6. Layer with ⅓ of the sauce mixture, then ⅓ mozzarella, followed by ⅓ Parmesan.
  7. Repeat layers until ingredients are used up, making 2-3 layers.
  8. Cover and cook on low for 2.5-3 hours, until noodles have softened.
  9. Let rest for 10 minutes before slicing and serving.

Notes

For a vegetarian option, replace sausage with roasted vegetables. Can also add a layer of spinach for extra nutrition.
