Ingredients

- 1 medium apple (thinly sliced)
- 1 cup sliced radishes
- ½ cup sliced red onion
- ½ cup dried cranberries
- ½ cup parsley (chopped)
- ½ cup mint leaves (chopped)
- ⅓ cup sunflower seeds
- ¼ cup olive oil
- ¼ cup lemon juice
- 1 tablespoon maple syrup
- 1 pinch salt and pepper
Instructions
- Toss celery, apple, radishes, red onion, parsley, and mint in a large mixing bowl.
- In a small bowl, whisk olive oil, lemon juice, salt, and pepper together.
- Drizzle the vinaigrette over the salad right before serving and toss gently to combine.

Store leftovers in an airtight container in the fridge, and keep the vinaigrette separate until serving to maintain crunch.
