- 1 can Black Beans, rinsed and drained
- 1 can Chickpeas, rinsed and drained
- 1 can Kidney Beans, rinsed and drained
- 1 cup Corn, drained
- ½ Red Onion, diced
- 1 Bell Pepper, diced
- ¼ cup Fresh Parsley, chopped
- 3 tablespoons Olive Oil
- 2 tablespoons Red Wine Vinegar
- 1 teaspoon Garlic Powder
- 1 teaspoon Cumin
- Salt and Pepper to taste
Instructions
- In a large bowl, combine the black beans, chickpeas, kidney beans, corn, diced red onion, bell pepper, and parsley.
- In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, cumin, salt, and pepper.
- Pour the dressing over the salad ingredients and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes to let the flavors meld.
