Description

A vibrant and hearty bean salad that combines black beans, chickpeas, kidney beans, and fresh vegetables, all tied together with a tangy dressing.


Ingredients

  • 1 can Black Beans, rinsed and drained
  • 1 can Chickpeas, rinsed and drained
  • 1 can Kidney Beans, rinsed and drained
  • 1 cup Corn, drained
  • ½ Red Onion, diced
  • 1 Bell Pepper, diced
  • ¼ cup Fresh Parsley, chopped
  • 3 tablespoons Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin
  • Salt and Pepper to taste

Instructions

  1. In a large bowl, combine the black beans, chickpeas, kidney beans, corn, diced red onion, bell pepper, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, cumin, salt, and pepper.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes to let the flavors meld.
