- 2 cups vegetable broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and sauté until translucent.
- Add minced garlic and sauté for another minute.
- Stir in pumpkin puree, vegetable broth, heavy cream, cinnamon, nutmeg, salt, and pepper.
- Bring to a boil then reduce heat and let simmer for about 10 minutes, stirring occasionally.
- Blend until smooth with an immersion blender or in batches with a regular blender.
- Serve warm and enjoy!
