Ingredients

  • 1 can pumpkin puree
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add minced garlic and sauté for another minute.
  4. Stir in pumpkin puree, vegetable broth, heavy cream, cinnamon, nutmeg, salt, and pepper.
  5. Bring to a boil then reduce heat and let simmer for about 10 minutes, stirring occasionally.
  6. Blend until smooth with an immersion blender or in batches with a regular blender.
