Ingredients

  • 1 lb Ground beef or turkey
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 can (15 oz) Kidney beans, drained and rinsed
  • 1 can (28 oz) Crushed tomatoes
  • 23 Chipotle peppers in adobo sauce, chopped
  • 1 tbsp Adobo sauce
  • 1 tbsp Chili powder
  • 1 tsp Cumin
  • Salt and pepper to taste
  • 1 cup Beef or vegetable broth
  • 1 Bell pepper, chopped (optional)
  • Corn (optional, for serving)
  • Cheese (optional, for serving)
  • Sour cream (optional, for serving)
  • Chopped cilantro (optional, for serving)

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat. Drain off excess fat if necessary.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent.
  3. Stir in the drained black beans, kidney beans, crushed tomatoes, chopped chipotle peppers, adobo sauce, chili powder, cumin, salt, and pepper.
  4. Pour in the broth and add the bell pepper if using. Stir to combine.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for at least 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning as needed before serving.

Feel free to customize with extra veggies or swap the meat for a plant-based alternative.
