Ingredients

  • 3 medium Yukon gold potatoes, chopped
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup half and half or whole milk
  • 4 oz cream cheese
  • 1 cup shredded sharp cheddar cheese (optional)
  • Salt to taste
  • Black pepper to taste
  • 1 tsp paprika (optional)
  • Bacon bits for topping (optional)
  • Green onions for topping (optional)

Instructions

  1. Start by prepping your potatoes. Chop them into small bite-sized pieces.
  2. Add the potatoes to your crockpot with chopped onion, garlic, broth, salt, and pepper.
  3. Cook on low for about 360 to 420 minutes or on high for 180 to 240 minutes.
  4. Turn the heat to low if it is not already. Use a potato masher to mash until desired texture.
  5. Stir in cream cheese in small chunks until it melts, then add milk or half and half.
  6. Taste and adjust seasonings, adding more salt and pepper if needed.
  7. Top with optional toppings before serving.

Notes

For a thicker soup, cook uncovered for 20 to 30 minutes or add more mashed potatoes.
