Ingredients

  • 1 box Jiffy corn muffin mix
  • 1 can sweet corn, drained
  • 1 can cream-style corn
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the Jiffy corn muffin mix, drained sweet corn, cream-style corn, sour cream, and melted butter. Stir gently until everything is well combined.
  3. If you’re adding the cheese, fold it into the mixture now along with salt and pepper to your liking.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake it in the oven for about 35–40 minutes, or until the top is golden brown and the center looks set.
  6. Once baked, let it cool for a few minutes before serving.

Notes

Try adding jalapeños for heat or using buttermilk instead of sour cream for more flavor.
