- 1 box Jiffy corn muffin mix
- 1 can sweet corn, drained
- 1 can cream-style corn
- 1 cup sour cream
- 1/2 cup butter, melted
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the Jiffy corn muffin mix, drained sweet corn, cream-style corn, sour cream, and melted butter. Stir gently until everything is well combined.
- If you’re adding the cheese, fold it into the mixture now along with salt and pepper to your liking.
- Pour the mixture into a greased baking dish, spreading it evenly.
- Bake it in the oven for about 35–40 minutes, or until the top is golden brown and the center looks set.
- Once baked, let it cool for a few minutes before serving.
Notes
Try adding jalapeños for heat or using buttermilk instead of sour cream for more flavor.
