Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 2 cups cauliflower rice, fresh or frozen
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Optional veggies: chopped spinach, broccoli, or mushrooms

Instructions

  1. Preheat your oven to 375 F. Lightly grease a casserole dish.
  2. If using frozen cauliflower rice, microwave it and squeeze out extra water.
  3. In a big bowl, mix softened cream cheese, sour cream, half the shredded cheese, and seasonings.
  4. Stir in the cooked chicken and cauliflower rice. Add any veggies you are using.
  5. Spoon the mixture into the casserole dish and spread it out evenly.
  6. Top with the rest of the shredded cheese.
  7. Bake for about 25 to 30 minutes, until hot and bubbly. Optional: broil for 1 to 2 minutes for a browner top.
  8. Let it sit for 5 to 10 minutes before serving.

Notes

Squeeze moisture from cauliflower rice for a thicker casserole. Taste mixture before baking to adjust seasoning.
