Ingredients

- 2 cups cooked chicken, shredded or chopped
- 2 cups cauliflower rice, fresh or frozen
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- Optional veggies: chopped spinach, broccoli, or mushrooms
Instructions
- Preheat your oven to 375 F. Lightly grease a casserole dish.
- If using frozen cauliflower rice, microwave it and squeeze out extra water.
- In a big bowl, mix softened cream cheese, sour cream, half the shredded cheese, and seasonings.
- Stir in the cooked chicken and cauliflower rice. Add any veggies you are using.
- Spoon the mixture into the casserole dish and spread it out evenly.
- Top with the rest of the shredded cheese.
- Bake for about 25 to 30 minutes, until hot and bubbly. Optional: broil for 1 to 2 minutes for a browner top.
- Let it sit for 5 to 10 minutes before serving.
Notes
Squeeze moisture from cauliflower rice for a thicker casserole. Taste mixture before baking to adjust seasoning.
