- 14 Breakfast sausage links (cooked and sliced, about 300g)
- 1 Bell pepper (finely diced, 80g)
- 1 cup Fresh spinach (finely chopped, 40g)
- ¼ cup Green onions (sliced)
- 1 ½ cups Shredded cheddar cheese (85g)
- 10 Large eggs
- 1 cup Half and half
- 1½ teaspoon Salt
- ½ teaspoon Dried parsley
- ¼ teaspoon Black pepper
- 70 Tater tots (575g)
- ¼ teaspoon Seasoning salt
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×13″ baking dish with non-stick spray.
- In your greased baking dish, stir together the sliced sausage, diced bell pepper, chopped spinach, sliced green onions, and shredded cheddar cheese.
- In a separate large bowl, whisk together the eggs, half and half, salt, parsley, and black pepper until well combined.
- Carefully pour the egg mixture over the veggie and sausage blend in the baking dish. Give it a gentle stir to combine everything.
- Top the mix with rows of tater tots, overlapping slightly to cover the surface.
- Sprinkle the seasoning salt over the tater tots for flavor.
- Bake in the preheated oven for 40–45 minutes or until the eggs are set and the tater tots are golden and crispy. Let cool slightly before serving.
Notes
For added fun, serve with toppings like avocado slices or salsa. This casserole keeps well and can be prepared ahead of time.
