- 1 lb Smoked Sausage (or turkey/vegetarian sausage)
- 2 medium Yukon Gold Potatoes (or pre-cooked, frozen, or sweet potatoes)
- 2 medium Zucchini (or bell peppers/squash)
- 1 medium Onion (or carrots/mushrooms)
- 1 medium Red Bell Pepper
- 1 tsp Garlic Powder (or fresh garlic)
- 1 tsp Onion Powder (optional)
- 1 tsp Smoked Paprika (or regular paprika with a touch of chili powder)
- 1 tsp Black Pepper
- 1 tsp Salt
- 2 tbsp Oil (for cooking)
Instructions
- Slice the smoked sausage into bite-sized pieces.
- Preheat your Blackstone griddle and add a bit of oil.
- Cook the sausage for 3-5 minutes until lightly browned.
- Chop the Yukon Gold potatoes into small cubes.
- Add potatoes to the griddle, cooking until lightly crispy.
- Add zucchini, onion, and red bell pepper, seasoning evenly with spices.
- Toss well and cook until veggies are tender.
- Ensure everything is heated through and adjust seasoning if needed.
Notes
Serve over rice or quinoa for added heartiness. Fresh herbs and a dollop of sour cream make great toppings.
