- 1 cup pecorino cheese, finely grated

Instructions
- Cook the gluten-free spaghetti according to package instructions in salted water. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat the olive oil over medium heat.
- Add freshly cracked black pepper and sauté for about 30 seconds.
- Add the drained pasta to the skillet and toss gently.
- Gradually add both cheeses while stirring, incorporating reserved pasta water as needed to create a creamy sauce.
- Adjust seasoning with salt if necessary and serve immediately.
