Ingredients

  • 1/4 cup Cocoa Powder (Hershey’s Special Dark)
  • 1 1/4 cup Gluten-free 1:1 Baking Flour Blend
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Brown Sugar
  • 1 Large Egg
  • 1 Large Egg Yolk
  • 1/2 teaspoon Vanilla
  • 1 cup Semi-sweet Chocolate Chips

Instructions

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. In a bowl, whisk together gluten-free flour, baking soda, and salt; set aside.
  3. Melt the butter in a small saucepan or microwave and stir in cocoa powder; let it bloom for 2 minutes.
  4. In a mixer, cream together the melted butter mixture and brown sugar until smooth.
  5. Add the egg, egg yolk, and vanilla; mix well to combine.
  6. Blend in the dry ingredients until just combined, being careful not to overwork the dough.
  7. Fold in the chocolate chips.
  8. Roll 1 tablespoon of dough into balls and place on the baking sheet.
  9. Bake for 8-9 minutes; let sit for 1-2 minutes before transferring to a wire rack.

These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days or frozen for a month.
