Description
A quick and customizable gluten-free quesadilla filled with cheese and your choice of delicious fillings.
Ingredients
- Gluten-free tortillas
- Shredded cheese (cheddar, mozzarella, or your choice)
- Cooked chicken, beans, or vegetables
- Olive oil or cooking spray
- Salsa or guacamole (for serving)
Instructions
- Heat a skillet over medium heat and grease it lightly with olive oil or cooking spray.
- Place one tortilla in the skillet and add a layer of cheese on half of it.
- Add your choice of cooked chicken, beans, or vegetables on top of the cheese.
- Fold the tortilla in half and cook for 2-3 minutes until golden and cheese is melting.
- Flip and cook for an additional 2-3 minutes on the other side.
- Remove from skillet, slice into wedges, and serve with salsa or guacamole.
Notes
Store leftovers in an airtight container in the fridge for up to three days or freeze them tightly wrapped for a month.
