Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and cook for about 5 minutes until soft.
- Add minced garlic and cook for 1 more minute.
- Stir in crushed tomatoes, vegetable broth, and dried herbs.
- Bring to a simmer and cook for 20 minutes.
- Blend until smooth with an immersion blender or in batches carefully.
- Taste and adjust seasonings as preferred.
- Serve hot, garnished with fresh basil if desired.
Notes
You can use fresh tomatoes instead of canned; just peel and roast them for added flavor. For a creamier soup, stir in a splash of cream or coconut milk before serving.
