Ingredients

  • 4 boneless, skinless chicken breasts (about 1 1/2 pounds)
  • 1/2 cup bourbon whiskey
  • 1/2 cup brown sugar, packed
  • 1/3 cup soy sauce
  • 1/4 cup apple cider vinegar
  • 1/2 cup chicken broth
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 medium onion, chopped
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish (optional)

Instructions

  1. Whisk bourbon, brown sugar, soy sauce, apple cider vinegar, chicken broth, garlic, and ginger in a bowl until the sugar dissolves.
  2. Pour marinade over chicken in a resealable bag. Refrigerate for at least 1 hour or overnight.
  3. Preheat Blackstone griddle on medium-high heat. Add vegetable oil and spread evenly.
  4. Remove chicken from marinade, reserving the marinade. Season chicken with salt and pepper.
  5. Cook chicken on the griddle for 5–6 minutes per side until the internal temperature reaches 165°F (74°C).
  6. Strain the reserved marinade into a saucepan and bring it to a gentle boil over medium heat.
  7. Mix cornstarch and water, then whisk into the boiling marinade to thicken.
  8. Brush the cooked chicken with sauce and let it rest before slicing.
  9. Slice chicken, drizzle with additional sauce, and garnish if desired.

Notes

Letting the chicken marinate overnight enhances flavor. Serve with rice or sautéed vegetables.
