Ingredients

- 2 cups gluten-free flour
- 1 cup mashed potatoes
- 1 large egg
- Salt to taste
- Water as needed
Instructions
- Boil potatoes until tender, then mash them until smooth.
- In a mixing bowl, combine mashed potatoes with gluten-free flour, egg, and salt. Mix gently to form a dough.
- On a floured surface, roll out the dough and cut into small pieces.
- Shape the pieces into small dumplings using a fork to create grooves.
- Boil a pot of salted water and cook the gnocchi until they float to the top.
- Drain and serve with your favorite sauce.
Notes
To store leftovers, keep in an airtight container in the fridge for up to three days. For longer storage, flash freeze and transfer to a freezer bag for up to a month.
