Ingredients

  • 1 Ham Bone
  • 2 Cups Navy Beans (soaked overnight)
  • 1 Onion (chopped)
  • 2 Carrots (diced)
  • 2 Celery Stalks (diced)
  • 4 Cloves Garlic (minced)
  • 6 Cups Chicken Broth
  • 1 Bay Leaf
  • Salt and Pepper to taste
  • Fresh Parsley for garnish

Instructions

  1. In a large pot, combine the ham bone and soaked navy beans. Cover with chicken broth.
  2. Add chopped onion, diced carrots, celery, garlic, and bay leaf.
  3. Bring to boil, then reduce heat and simmer for 1.5 to 2 hours until beans are tender.
  4. Remove the ham bone, chop off any meat, and return the meat to the pot.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

This soup tastes even better the next day! Store leftovers in an airtight container for up to five days. You can also freeze portions for future meals.
