Ingredients

  • 1 teaspoon Baking soda
  • 1/4 teaspoon Kosher salt
  • 1/2 cup Unsalted butter (softened)
  • 1 cup Light brown sugar
  • 1 cup Creamy peanut butter
  • 1 Large egg
  • 1/2 teaspoon Pure vanilla extract
  • 1/2 cup Sugar (for rolling)
  • 1/4 cup Unsalted butter (softened, for filling)
  • 1/2 cup Creamy peanut butter (for filling)
  • 1 1/2 cups Powdered sugar
  • 2 tablespoons Milk
  • 1/4 teaspoon Vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, and kosher salt. Set aside.
  3. Cream the softened butter and brown sugar until light and fluffy, about 3-4 minutes.
  4. Mix in the creamy peanut butter, egg, and vanilla extract until fully combined.
  5. Gradually add the dry mixture to the wet ingredients, folding gently until just incorporated.
  6. Form the dough into 1-inch balls, roll them in sugar, and flatten slightly with a fork on the prepared baking sheet.
  7. Bake for 10-12 minutes until the edges turn golden. Allow cooling on a wire rack.
  8. For the filling, mix together the softened butter, peanut butter, powdered sugar, milk, and vanilla until creamy.
  9. Spread the filling generously between two cookie halves to make sandwiches.

Notes

Store in an airtight container at room temperature for up to one week, or freeze for about a month. Let them thaw at room temperature when ready to enjoy.
