- 2 lbs chicken thighs or breasts, cut into chunks
- 4 cups diced potatoes
- 3 cups sliced carrots
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth

- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Optional: 1 cup frozen peas
Instructions
- In the slow cooker, combine the chicken, potatoes, carrots, onion, and garlic.
- Pour in the chicken broth and add thyme, rosemary, salt, and pepper.
- Gently stir the ingredients to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- If using, stir in the frozen peas during the last 30 minutes of cooking.
- Serve hot and enjoy your homemade chicken stew.
