- 4 Chicken Breasts
- 1/2 cup Honey
- 1/2 cup BBQ Sauce
- 2 pounds Potatoes, diced
- 1/2 cup Grated Parmesan Cheese
- 3 cloves Garlic, minced
- 3 tablespoons Olive Oil
- Salt and Pepper to taste
- Fresh Parsley for garnish (optional)
Instructions
- Preheat your grill or oven to medium heat.
- In a bowl, mix together honey and BBQ sauce until well combined. Coat the chicken breasts with this mixture.
- Grill or bake the chicken for about 20-25 minutes or until cooked through, reaching 165°F internally.
- In another bowl, combine diced potatoes with olive oil, garlic, Parmesan cheese, salt, and pepper. Toss until well-coated.
- Spread the seasoned potatoes on a baking sheet and roast in the oven at 400°F for 25-30 minutes until golden and crispy.
- Serve the chicken alongside the garlic Parmesan potatoes, garnishing with fresh parsley if desired.
Notes
For enhanced flavor, marinate the chicken in the honey BBQ mixture for a few hours or overnight. You may also add a pinch of cayenne pepper for extra spice.
