Ingredients

  • 1 tablespoon Lemon Zest
  • 2 tablespoons Lemon Juice
  • 1 1/2 cups All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 cup Blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Cream together sugar and butter until light and fluffy.
  3. Add egg, lemon zest, and lemon juice; mix until combined.
  4. In a separate bowl, whisk flour, baking soda, and salt together; gradually add to wet ingredients and mix until just combined.
  5. Gently fold in blueberries.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For best flavor, use fresh blueberries. Chill the dough for 30 minutes to prevent spreading if needed.
