  • 58 drops yellow food coloring (optional)
  • 1/4 cup sugar (for rolling)
  • 3/4 cup powdered sugar

Instructions

  1. Whisk together flour, baking soda, and salt in a large bowl.
  2. Beat softened butter and 1 cup sugar until fluffy in a stand mixer.
  3. Add egg, lemon juice, lemon zest, vanilla extract, and food coloring into the mixer and mix well.
  4. Gradually add the dry ingredients to the mixer until just incorporated. Chill dough in the refrigerator for at least 2 hours.
  5. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  6. Roll chilled dough into balls; roll in sugar and powdered sugar.
  7. Bake for 10-12 minutes until golden around the edges but soft in the center.
  8. Cool on sheets for 5 minutes before transferring to a cooling rack.
