- 2 pounds potatoes, preferably Russets
- 4 slices bacon
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 green onions, chopped
- Salt and pepper to taste
- Butter for grilling
Instructions
- Boil potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly.
- Preheat the Blackstone griddle.
- Smash the potatoes with a fork or potato masher.
- Cook bacon on the griddle until crispy, then chop it.
- Place smashed potatoes on the griddle, drizzle with melted butter, and season with salt and pepper.
- Sprinkle cooked bacon and cheddar cheese on top of potatoes.
- Cover with a lid to allow cheese to melt for about 5 minutes.
- Serve topped with sour cream and chopped green onions.
