Description

A cozy, comforting pasta dish featuring tender chicken and a rich, creamy sauce with vibrant cherry tomatoes.


Ingredients

  • 8 oz pasta (such as fettuccine or penne)
  • 2 chicken breasts
  • 1 cup cherry tomatoes
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Cook pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Season chicken breasts with Italian seasoning, salt, and pepper. Cook for 6-7 minutes per side until golden, then remove from skillet.
  4. Add minced garlic and cherry tomatoes to the skillet; cook until tomatoes are soft.
  5. Pour in heavy cream and simmer, stirring in the parmesan until melted and creamy.
  6. Slice cooked chicken and return to skillet with pasta; toss everything together until well incorporated.
  7. Serve garnished with fresh basil.

Notes

For extra flavor, add a pinch of red pepper flakes or mix in some spinach or kale.
