- 8 oz pasta (such as fettuccine or penne)
- 2 chicken breasts
- 1 cup cherry tomatoes
- 1 cup heavy cream
- 1 cup parmesan cheese, grated
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions
- Cook pasta according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Season chicken breasts with Italian seasoning, salt, and pepper. Cook for 6-7 minutes per side until golden, then remove from skillet.
- Add minced garlic and cherry tomatoes to the skillet; cook until tomatoes are soft.
- Pour in heavy cream and simmer, stirring in the parmesan until melted and creamy.
- Slice cooked chicken and return to skillet with pasta; toss everything together until well incorporated.
- Serve garnished with fresh basil.
Notes
For extra flavor, add a pinch of red pepper flakes or mix in some spinach or kale.
