Description

Ingredients

  • 1 lb Ground beef
  • 1 cup Long-grain rice
  • 1 can Black beans (drained and rinsed)
  • 1 can Corn (drained)
  • 1 cup Salsa
  • 1 tsp Chili powder
  • 1 tsp Cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • Salt and pepper to taste
  • 2 cups Beef broth
  • Cheddar cheese for topping (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium heat.
  2. Drain excess fat, then stir in rice, black beans, corn, salsa, seasonings, and beef broth.
  3. Bring to a boil, reduce heat to a simmer, and cover.
  4. Cook for 20-25 minutes until the rice is tender and liquid is absorbed.
  5. Remove from heat and top with cheddar cheese, if using.
  6. Garnish with cilantro before serving.

Notes

Feel free to substitute ground turkey for a lighter option. This dish can be made ahead of time and reheats well.
