- 1 lb Ground beef
- 1 cup Long-grain rice
- 1 can Black beans (drained and rinsed)
- 1 can Corn (drained)
- 1 cup Salsa
- 1 tsp Chili powder
- 1 tsp Cumin
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- Salt and pepper to taste
- 2 cups Beef broth
- Cheddar cheese for topping (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Brown the ground beef in a large skillet over medium heat.
- Drain excess fat, then stir in rice, black beans, corn, salsa, seasonings, and beef broth.
- Bring to a boil, reduce heat to a simmer, and cover.
- Cook for 20-25 minutes until the rice is tender and liquid is absorbed.
- Remove from heat and top with cheddar cheese, if using.
- Garnish with cilantro before serving.
Notes
Feel free to substitute ground turkey for a lighter option. This dish can be made ahead of time and reheats well.
