Ingredients

  • 2 tablespoons oil
  • 1 cup light brown sugar
  • ¼ cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons cinnamon
  • Fleur de Sel, for sprinkling

Instructions

  1. In a large bowl, mix the room temperature butter, oil, brown sugar, and honey until smooth.
  2. Blend in the egg and vanilla extract, ensuring everything is well incorporated.
  3. Gently add flour, baking soda, salt, and cinnamon. Stir until just combined.
  4. Line a baking sheet with parchment paper and scoop 3 tablespoon-sized rounds onto it.
  5. Cover and refrigerate for 1 ½ hours to firm up.
  6. Preheat the oven to 350°F (175°C) and place the cookie dough balls on another lined baking sheet.
  7. Bake for about 10 minutes, or until the edges are set.
  8. Immediately sprinkle with Fleur de Sel upon removal from the oven.
  9. Let cool on the baking sheet for a few minutes, then transfer to a wire rack.
