A satisfying and comforting slow-cooked barbecue chicken with a rich aroma and a flavor profile that balances sweet and savory.


Ingredients

  • 23 lbs boneless, skinless chicken breasts or thighs
  • Salt & Pepper
  • ¾ cup barbecue sauce
  • ½ cup brown sugar (lightly packed)
  • ½ cup unsweetened pineapple juice
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cornstarch
  • 2 cloves garlic (finely minced)
  • ½ teaspoon onion powder
  • ⅛ teaspoon red chili flakes

Instructions

  1. Place chicken in a slow cooker. Season both sides with salt and pepper.
  2. In a bowl, stir together barbecue sauce, brown sugar, pineapple juice, Worcestershire sauce, cornstarch, garlic, onion powder, and red chili flakes.
  3. Pour the sauce over the chicken.
  4. Cover and cook on low for 3-4 hours or high for 2 hours, until chicken is 165°F.
  5. Shred the chicken or serve whole. Mix back into the sauce.
  6. Taste and adjust seasoning as desired.

Notes

This dish can be served with rice, roasted potatoes, or as a sandwich. It stores well in the fridge for three days and can be frozen for a month.
