- 2–3 lbs boneless, skinless chicken breasts or thighs
- Salt & Pepper
- ¾ cup barbecue sauce
- ½ cup brown sugar (lightly packed)
- ½ cup unsweetened pineapple juice
- 2 tablespoons Worcestershire sauce
- 2 tablespoons cornstarch
- 2 cloves garlic (finely minced)
- ½ teaspoon onion powder
- ⅛ teaspoon red chili flakes
Instructions
- Place chicken in a slow cooker. Season both sides with salt and pepper.
- In a bowl, stir together barbecue sauce, brown sugar, pineapple juice, Worcestershire sauce, cornstarch, garlic, onion powder, and red chili flakes.
- Pour the sauce over the chicken.
- Cover and cook on low for 3-4 hours or high for 2 hours, until chicken is 165°F.
- Shred the chicken or serve whole. Mix back into the sauce.
- Taste and adjust seasoning as desired.
Notes
This dish can be served with rice, roasted potatoes, or as a sandwich. It stores well in the fridge for three days and can be frozen for a month.
