- 1 cup all-purpose flour
- 2 tablespoons sugar

- 1/4 cup milk
- 1 large egg
- 2 tablespoons canola oil
- 4 cups mixed berries (fresh or thawed and drained if frozen)
- 1 cup sugar (for the berry mixture)
- 1/4 cup all-purpose flour (for the berry mixture)
Instructions
- In a large bowl, whisk together 1 cup of flour, 2 tablespoons of sugar, baking powder, and cinnamon until well blended.
- Stir in 1/4 cup of milk, the egg, and 2 tablespoons of canola oil. Mix until just combined.
- Lightly grease a 2.5-4 quart slow cooker with oil or cooking spray.
- Spread the batter evenly across the bottom of the slow cooker.
- In another bowl, combine the berries, 1 cup of sugar, and 1/4 cup of flour. Gently toss to coat the berries.
- Pour the berry mixture over the batter in the slow cooker without mixing the layers.
- Cover the slow cooker and set it to cook on high for 2-3 hours, depending on whether you are using fresh or thawed berries.
- Serve warm, ideally with a scoop of ice cream.
Notes
For best results, drain frozen berries to avoid excess moisture. Consider adding lemon zest for brightness or nuts for crunch.
