Instructions

  1. In a large bowl, whisk together 1 cup of flour, 2 tablespoons of sugar, baking powder, and cinnamon until well blended.
  2. Stir in 1/4 cup of milk, the egg, and 2 tablespoons of canola oil. Mix until just combined.
  3. Lightly grease a 2.5-4 quart slow cooker with oil or cooking spray.
  4. Spread the batter evenly across the bottom of the slow cooker.
  5. In another bowl, combine the berries, 1 cup of sugar, and 1/4 cup of flour. Gently toss to coat the berries.
  6. Pour the berry mixture over the batter in the slow cooker without mixing the layers.
  7. Cover the slow cooker and set it to cook on high for 2-3 hours, depending on whether you are using fresh or thawed berries.
  8. Serve warm, ideally with a scoop of ice cream.

Notes

For best results, drain frozen berries to avoid excess moisture. Consider adding lemon zest for brightness or nuts for crunch.
