Ingredients

  • 2 lbs Boneless, skinless chicken thighs or breasts
  • 3 Carrots, diced
  • 3 Celery stalks, diced
  • 1 Onion, diced
  • 4 medium Potatoes, peeled and cubed
  • 4 cloves Garlic, minced
  • 4 cups Low-sodium chicken broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 2 Bay leaves
  • Salt and pepper, to taste
  • 1/4 cup All-purpose flour (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Sear the chicken in a skillet over medium-high heat until golden brown on both sides.
  2. Transfer the chicken to the slow cooker and add diced vegetables and potatoes.
  3. Season with thyme, salt, and pepper; stir gently to combine.
  4. Add chicken broth, whisking in flour with a bit of broth first if using.
  5. Cover and set to low for 6-8 hours or high for 3-4 hours.
  6. Remove bay leaves, taste for seasoning, and garnish with parsley before serving.

Notes

This stew can be made a day ahead; the flavors deepen the longer it sits. It’s also freezer-friendly for up to a month.
