Description

Comforting slow-cooked chicken with flavors of street corn in a creamy, zesty mixture, perfect for busy days.


Ingredients

  • 1 lb Boneless Chicken Breasts/Thighs
  • 2 cups Corn
  • 4 oz Cream Cheese
  • 1/3 cup Cotija Cheese
  • 1 Lime
  • 2 cloves Garlic
  • 1/2 tsp Chili Powder
  • 1/2 tsp Smoked Paprika
  • 1/2 tsp Onion Powder
  • Fresh Cilantro (Optional)

Instructions

  1. Grease the slow cooker.
  2. Layer with chicken, corn, cream cheese, and cotija cheese.
  3. Squeeze lime juice over the mixture.
  4. Sprinkle minced garlic, chili powder, smoked paprika, and onion powder.
  5. Add a splash of water if needed.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. Shred chicken in the pot and mix.
  8. Serve with garnish of fresh cilantro if desired.

Notes

Serve on a bed of lettuce or in taco shells for a lighter meal. Pairs well with rice or grits.
