Spinach Stuffed Chicken Breasts

Description

A wholesome, low-carb dish filled with creamy spinach and cheese, perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 4 oz cream cheese, softened
  • 1/2 cup shredded mozzarella
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté spinach in olive oil for about 3-4 minutes. Add minced garlic and cook for another minute.
  3. In a bowl, mix cooked spinach with cream cheese, mozzarella, Italian seasoning, salt, and pepper.
  4. Slice a pocket into each chicken breast and stuff generously with the spinach mixture.
  5. In a skillet, sear each stuffed chicken breast until golden brown on both sides.
  6. Place the chicken in a baking dish, drizzle with olive oil, and season with salt and pepper.
  7. Bake for 25-30 minutes until cooked through (165°F internal temperature). Allow to rest for 5 minutes before serving.

Notes

For added crunch, top with breadcrumbs mixed with olive oil before baking. This dish stores well in the fridge for 3 days or can be frozen for up to a month.
