Description

Delightful vegan cookies made with wholesome oats and rich chocolate chips, perfect for any occasion.


Ingredients

  • ½ cup Vegan butter (softened)
  • ⅔ cup Light brown sugar
  • 1 teaspoon Vanilla extract
  • ¾ cup All-purpose flour
  • 1 teaspoon Cinnamon
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • 1 ½ cups Rolled oats
  • ½ cup Vegan chocolate chips
  • 2 tablespoons Plant-based milk (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened vegan butter, light brown sugar, and vanilla extract until creamy, about 2 minutes.
  3. Add in the all-purpose flour, cinnamon, baking soda, and salt. Mix until just combined.
  4. Fold in the rolled oats and chocolate chips.
  5. If the dough is too dry, add 1-2 tablespoons of plant-based milk until the consistency is perfect.
  6. Drop 1-2 tablespoons of cookie dough onto a lined baking sheet.
  7. Bake for 10-11 minutes until chewy; cool on the sheet for 2 minutes before transferring to a wire rack.

Notes

For a crunchier cookie, bake an extra minute or two. Store in an airtight container for up to a week or freeze for a month.
