Ingredients

  • 2 tablespoons butter (or olive oil)
  • 2 tablespoons all purpose flour
  • 2 cups milk (warm is best)
  • 1/4 teaspoon salt (adjust later)
  • 1/4 teaspoon black pepper
  • A tiny pinch of nutmeg (optional)
  • 12 cups shredded cheese (cheddar recommended)
  • 2 cups macaroni

Instructions

  1. Boil a big pot of water and salt it well. Add macaroni and cook until just tender. Drain and set aside.
  2. In a pan, melt butter on medium heat. Stir in flour and cook for about a minute until it smells slightly nutty.
  3. Slowly whisk in milk, a little at a time, until it thickens. Season with salt, pepper, and nutmeg if using.
  4. Lower the heat and stir in shredded cheese until melted and creamy.
  5. Add the drained macaroni into the cheese sauce and stir until coated. Serve immediately.

Notes

For a twist, add sautéed vegetables or cooked chicken. Reheat on low with a splash of milk to keep it creamy.
