Ingredients

  • 4 Chicken thighs (boneless or bone-in)
  • Salt and black pepper to taste
  • 1 tsp Garlic powder
  • 1 tsp Paprika (optional)
  • 1 small onion, sliced
  • 2 to 3 cloves garlic, minced
  • 1 cup Chicken broth
  • 1 cup Heavy cream (or half and half)
  • 2 tbsp Butter or oil
  • 2 cups Cooked rice for serving
  • Optional: mushrooms, spinach, or a pinch of thyme

Instructions

  1. Brown the chicken in a skillet until golden on both sides.
  2. Add onions and garlic to the pan, cooking until softened.
  3. Pour in the chicken broth, scraping the bottom of the pan for flavor.
  4. Stir in the heavy cream and let simmer until the sauce thickens.
  5. Serve the creamy sauce over the cooked rice with optional vegetables as desired.

Notes

For a low carb option, serve the chicken and sauce over cauliflower rice or zucchini noodles. Adjust the seasonings to taste and add veggies for extra nutrition.
