Ingredients

  • 4 chicken thighs (bone-in or boneless)
  • 1 cup long grain white rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup carrots, diced (optional)
  • 1 cup peas (optional)
  • 1 teaspoon paprika
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon thyme or Italian seasoning (optional)
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Pat the chicken dry with paper towels and season with salt, pepper, and paprika.
  2. Heat oil in a large pot over medium heat, add chicken, and brown on both sides. Transfer to a plate.
  3. Add onion to the pot, scraping up browned bits, then add garlic for the last 30 seconds.
  4. Stir in rice and coat it with oil, then pour in chicken broth and bring to a gentle simmer.
  5. Nestle the chicken back in on top of the rice. Add carrots if using.
  6. Cover and reduce heat, cooking until rice is tender and chicken is cooked through (approximately 18-25 minutes).
  7. Add peas at the end, cover, and let rest for 5-10 minutes before serving.
