Description
A delicious mashup of grilled cheese and chicken sandwich with a smoky chipotle kick.
Ingredients

- 2 slices sourdough bread
- 1 cup cooked chicken (grilled, rotisserie, or leftovers)
- 1 cup cheese (cheddar, pepper jack, or a mix)
- 3 tablespoons chipotle mayo (or mayo mixed with minced chipotle in adobo)
- 2 tablespoons butter (or oil) for crisping
- Optional: sliced red onion, pickles, tomato, or baby spinach
Instructions
- If your chicken is plain, toss it with chipotle mayo or adobo sauce and a pinch of salt.
- Heat a skillet over medium heat.
- Spread butter on one side of each bread slice and place one slice butter side down in the pan.
- Layer cheese, chicken, then more cheese on the bread in the pan.
- Spread chipotle mayo on the inside of the top slice of bread and place it on top, butter side up.
- Cook for 3 to 5 minutes per side until golden and cheese is melted.
- Let it rest for 1 minute before slicing.
Notes
Use medium heat for best results. Customize with preferred toppings and enjoy fresh.
