- 1 1/2 cups old fashioned oats
- 1 cup all purpose flour
- 3/4 cup brown sugar
- 1/4 teaspoon salt
- 1/2 cup butter, melted
- 2 cups strawberries, fresh or frozen
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1 teaspoon vanilla (optional)
Instructions
- Prep your pan. Heat your oven to 350°F. Line your pan with parchment paper with a little overhang.
- Add strawberries to a saucepan with lemon juice and sugar. Warm until juicy. Stir in cornstarch mixed with water and cook for 1 to 2 minutes until thickened.
- In a bowl, stir oats, flour, brown sugar, and salt. Pour in melted butter and mix until it resembles damp sand.
- Press about two thirds of the oat mixture into the pan to form a solid base. Spread the strawberry filling on top and sprinkle the remaining crumble mixture.
- Bake for 30 to 40 minutes until the top is lightly golden. Let cool completely before slicing.
Notes
Use parchment paper for easy lifting and slicing. Adjust sweetness based on the sweetness of your strawberries.
