Ingredients

  • 2 tablespoons olive oil
  • 1 diced onion
  • 2 cloves minced garlic
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • 2 cups chopped spinach or kale
  • 1 cup vegan meatballs or white beans
  • 1/2 cup coconut milk or cashew cream (optional)
  • 1 cup chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Warm olive oil in a big pot, then add diced onion. Cook until soft, about 5 minutes. Add minced garlic for 30 seconds, just until it smells amazing.
  2. Pour in crushed tomatoes and a splash of broth. Stir, then add salt, pepper, and Italian seasoning. Let it simmer 10 minutes.
  3. Stir in coconut milk or cashew cream if desired.
  4. Add chopped spinach or kale plus vegan meatballs or white beans. Simmer for 8-10 minutes.
  5. Turn off the heat and add chopped fresh basil. Taste and adjust salt as needed.

Notes

For a richer flavor, a pinch of sugar or a splash of balsamic vinegar can enhance the taste of tomatoes. Best served with crusty bread or garlic toast.
