Ingredients

- 2 tablespoons olive oil
- 1 diced onion
- 2 cloves minced garlic
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon Italian seasoning
- 2 cups chopped spinach or kale
- 1 cup vegan meatballs or white beans
- 1/2 cup coconut milk or cashew cream (optional)
- 1 cup chopped fresh basil
- Salt and pepper to taste
Instructions
- Warm olive oil in a big pot, then add diced onion. Cook until soft, about 5 minutes. Add minced garlic for 30 seconds, just until it smells amazing.
- Pour in crushed tomatoes and a splash of broth. Stir, then add salt, pepper, and Italian seasoning. Let it simmer 10 minutes.
- Stir in coconut milk or cashew cream if desired.
- Add chopped spinach or kale plus vegan meatballs or white beans. Simmer for 8-10 minutes.
- Turn off the heat and add chopped fresh basil. Taste and adjust salt as needed.
Notes
For a richer flavor, a pinch of sugar or a splash of balsamic vinegar can enhance the taste of tomatoes. Best served with crusty bread or garlic toast.
